1 salmon fillet (center cut), skinned, cut into 1/2 inch pieces
1/2 cup all-purpose flour
1 cup seasoned bread crumbs
1 cup parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
Olive oil for drizzle
1/2 cup Plain Greek yogurt
1 lime (fresh juice)
1/4 cup finely clopped cilantro
*** For richer taste add 1/4 cup of mayo
Preheat the oven to 400 degrees
Bake for 15 to 20 minutes until golden brown
